Shortly after opening The Wild Olive we were having trouble with workflow and production on our saute line. We considered a new range with two convection ovens to help with finishing our dishes. Before we made the final decision, Edward Berlin (the owner!) stood inside my kitchen for two hours on a Saturday night and observed our kitchen in operation. Edward’s solution involved trading in our existing range (for full credit!) and getting a unit with higher BTU burners and a single convection oven. The change worked, it saved me money and it proved to me that I had chosen the right company to work with!
